We've gotten a little adventurous in our cooking a bit lately. This has a lot to do with fun National Holidays we try and celebrate from time to time...amazing A LOT of them have to do with food!! April 25th
May 16th (my birthday Ü) was National Pizza Party Day. Couldn't happen on a better day. Ü We celebrated on Monday, May 19th by making our own individual pizzas.

At the end of May I got real crazy and made stuffed pasta shells and all the fixings from a recipe I found on the website I posted above. Homemade filling, homemade sauce, this crazy vegetable skillet things where I actually crushed and sautéed garlic and homemade garlic bread as opposed to store bought. It was VERY yummy but VERY time consuming. This will probably be a rare treat. Ü

June 12th was National Peanut Butter Cookie Day.
Alex LOVES to bake so we got on my website and found an AMAZING recipe for...are you ready for this...Swirled Peanut Butter and Nutella Stuffed Chocolate Chip Cookies!! Oh yeah!!! Words can not even describe these beautiful yummy things!!
You have a layer of cookie dough, then a spoonful of the peanut butter/nutella filling, then another layer of cookie dough.

Luckily the kids had a play date with the Kent's that afternoon so we were able to share...otherwise I would have eaten them all!! Ü

My friend Natalie gave me a recipe for Hawaiian Meatballs. I was pretty skeptical but she swore that she always makes these when company comes and everyone raves about them. Her kids even ask for this for their birthday dinner. So I tried it a few weeks ago when the Kents were over. Again, Alex helped me in the kitchen. And Natalie was right. It was super delish!! This summer I've been having the kids take turns helping me with meals. They each take a week and help plans the meals, go on the grocery shopping trip, prepare the meals, and help with clean up. Everyone (Abby, Andy, Alex, and Ben) have each had a turn and we're starting over again. I'd love to keep this up during the school year. Its' been fun!! It also has helped pass off requirements for Cub Scouts, Faith in God, and Personal Progress.
National Waffle Iron Day happened during Abby's week to cook. We make regular waffle and tried chocolate waffles for the first time.

The kids all enjoyed the waffles but I actually like the regular ones better...with chocolate chips of course!!
I saw this recipe on facebook. It looked awesome so we tried it yesterday. And awesome it Totally was!!
We had fun on World UFO day last Wed with watching E.T. - the kids first time!! Tomorrow is National Video Game Day and National Chocolate with Almonds Day. The boys are excited to play as much screens as they want with the deal that if I ask them to come do something they stop and come...complaints lead to no more screens for the day!! As for the chocolate with almonds...they didn't make it til tomorrow.Ü
